
Simple Chilled Raspberry Soup
Method:
Mix everything in a blender until smooth and allow to chill for at least 30 minutes.
Serve chilled and garnish with coriander and some whole raspberries.
Ingredients:
- 2 C fresh raspberries (plus a few for garnish), rinsed
- 1/3 C lemongrass, finely chopped
- 4-5 kaffir lime leaves, finely chopped
- 1/2 C fresh coriander (plus some for garnish), finely chopped
- 1 C coconut milk
