Mango Cake

Method:

Preheat oven to 180 degrees Celsisus.

Sift the flours, baking powder, baking soda, mixed spice and salt into a large bowl. Stir in the sugar and chopped walnuts. Make a well in the ingredients.

Combine the oil and lemon juice. Stir into the dry ingredients with the pureed mango and essence. Put into a prepared 23 cm springform tin.

Bake for 60 minutes.  Let stand for 10 minutes before turning out onto a wire rack to cool.

Dust with icing sugar before serving.

Ingredients:

  • 2 1/2 C all purpose flour
  • 1/2 C rice flour
  • 4 tsp baking powder
  • 1 tsp baking soda
  • 2 tsp mixed spice
  • Pinch of salt
  • 2 C raw sugar
  • 1/4 C chopped walnuts
  • 1/2 C oil
  • 1/3 C lemon or lime juice
  • 1 1/2 C raisins
  • 1 3/4 C pureed mango
  • 1 tsp vanilla essence
