Banana Rice Pudding
Method:
Preheat oven to 170 degrees Celsius.
Mix all ingredients together well and pour into a large casserole.
Bake for 1-1 1/2 hours, stirring occasionally, until rice is tender.
Serve sprinkled with toasted coconut and banana slices.

- 3 C rice or soy milk
- 1 C Arborio rice
- 3 ripe bananas, mashed
- 1 banana, sliced
- 1⁄2 tsp nutmeg
- 1/4 C toasted coconut
