Black bean burrito

Method:

Pop the rice on to cook.

Heat up a pan with a dash of oil or water. Add the onion and simmer until softened.

Empty the cans of beans into the pan next, (with the liquid).

Next, stir in the paprika and cumin, and continue to cook until most of the liquid has absorbed.

Assemble the burritos adding rice, beans, avocado and salad ingredients.

Wrap and enjoy!

Ingredients:

(Serves 4)

1 cup rice

1 white onion (sliced)

1 can black beans

1 can pinto beans

1 tbsp paprika

1 tbsp cumin

1 tomato (chopped)

1 avocado (smashed with a dash of lemon juice and salt)

1 small cucumber (halved and sliced)

1 capsicum (sliced)

2 handfuls salad greens

4 large tortillas
