Lebanese White Bean Salad
Method:
Combine the beans, cucumber, tomato, capsicums, onion, carrot, dill, mint, cumin, oil, and lemon. Season with salt and pepper to taste. Gently mix and refrigerate for at least one hour before serving.
Ingredients:
- 3 C white beans, cooked or canned
- 1 cucumber, peeled, seeded and chopped
- 1 ripe tomato, chopped
- 1 red capsicum
- 1 yellow capsicum
- 1/2 red onion
- 1 carrot
- 1 tsp dill
- 1 tsp mint
- 1 tsp ground cumin
- 1 Tbsp olive oil
- 2 Tbsp fresh lemon juice
- 1 tsp sea salt
- Black pepper, to taste
