Vegan cheddar
Method:
- Soak the cashews in boiling water for 10 minutes, then drain
- Add all of the ingredients, except for one of the two cups of water and agar agar powder and blend in a food processor until smooth
- In a pot, add the remaining cup of water and stir in the agar agar powder until it dissolves
- Add the cashew mixture to the pot and boil for 1-2 minutes, whisking throughout
- Pour the mixture onto an oiled container and smooth the top with the back of a spoon
- Refrigerate until firm, (around 2-3 hours) then turn out onto a cheese board, slice and enjoy!
Ingredients:
1 cup of cashews
Juice of 2 lemons
1 cup of water
¼ cup refined coconut oil (non-refined will make your cheese taste coconutty)
½ cup of nutritional yeast
1 Tbsp corn starch or tapioca flour
2 tsp paprika (or smoked paprika)
¼ tsp turmeric
Salt to taste
1 tbsp agar agar powder
1 cup water (for agar agar)
