Spicy Moroccan silverbeet

Spicy Moroccan silverbeet

Method:

Heat a little oil or water in a large frying pan on medium heat.

Sauté the onion, garlic and chilli for a few minutes or until they begin to soften.

Mix in the Moroccan seasoning and tomato paste.

Add the silverbeet, coriander and chickpeas, stirring occasionally, for 3 minutes or until silverbeet wilts.

Remove from heat and stir in the lemon juice and season with salt and pepper to taste.

Plate up as aside or on its own, and enjoy!

Ingredients:

2 tbsp olive oil
1 onion (diced)
3 garlic cloves (diced)
1 long red chilli (seeded and chopped)
1 1/2 tbsps Moroccan seasoning
1 tbsp tomato paste
1 large bunch silverbeet (chopped and stems removed)
1/4 cup coriander (chopped)
1 can chickpeas (drained and rinsed)
1 tbsp lemon juice
