Chickpea ‘chuna’ sandwich
Method:
Add onion, chickpeas, mayo and mustard to a bowl and mix well.
Mash the mixture with a fork or potato masher, until most chickpeas are squashed.
Your ‘chuna’ filling is ready to be made into a fish-friendly sandwich!
Ingredients:
(Serves 4)
1/2 red onion (diced)
2 cans chickpeas (drained and rinsed)
1/2 cup vegan mayo
1 tbsp mustard
To serve
8 slices wholemeal bread
2 handfuls salad greens
