KFC (Kentucky Fried Cauliflower)

Method:

Preheat the oven to 220°C

Place cauliflower florets on a baking tray lined with baking paper. Add salt and pepper.

Bake for 30 to 35 minutes until tender.

For the wet batter add the plant milk, lemon juice and hot sauce into a large bowl. Sift in the cornflour and mix well.

In another large bowl, combine the flour with salt and all the spices to make the dry batter.

Dip each cauliflower floret first in the wet batter then the dry batter, and repeat.

Heat the oil in a small pot. Next, fry a few pieces at a time of the battered cauliflower for 2-3 minutes on each side until golden brown and crispy.

Remove and transfer onto a baking sheet or a plate covered with paper towels to absorb excess oil. Serve with your favourite sauce!

Ingredients:

For the cauliflower:

1 cauliflower, chopped into florets

1 tsp salt and pepper

½ cup of oil for frying (coconut oil is healthiest if you have some)

 

For the wet batter:

1 C plant milk

1 Tbsp lemon juice or white vinegar

1 Tbsp hot sauce (optional)

 

2 tsp cornflour

 

For the dry batter:

2 C white flour

1 tsp salt and chilli powder

2 tsp each of garlic and onion powders

1 tsp ground coriander and celery salt

½ tsp each of ground nutmeg, cinnamon, cumin and allspice
