Banana pancakes

Method:

Add dry ingredients to a large bowl, mix well to combine. Make a well in the middle.

Mash one of the bananas in a separate bowl. Add this to the dry ingredients along with the plant milk.

Whisk until smooth.

Heat vegan butter or oil in a pan on medium heat.   

Scoop in a large spoonful of the mixture (a ladle works well).

When bubbles appear on the surface, flip. Remove once the pancake is golden on both sides. Cook the remainder of the mixture, adding a dash more vegan butter or oil as needed.

Serve with date syrup and chopped banana.

Ingredients:

(Makes 4 small pancakes)

1 1/4 cups all-purpose flour

1 tbsp baking powder

1/4 tsp salt

1 tsp cinnamon

2 bananas (ripe)

3/4 cup plant milk

1 tbsp vegan butter or oil
