Gaspacho Soup

Gaspacho Soup

Method:

Combine everything except the fresh herbs and a few pieces of cucumber and capscium (for garnish) in a blender or food processor, and process until smooth.

Stir in the herbs, refrigerate until cool and garnished with cucumber and capscium pieces. Serve with bread.

Ingredients:

  • 1 cucumber, sliced into chunks
  • 4 large ripe tomatoes
  • 1⁄2 capsicum
  • clove garlic
  • 1 celery rib, chopped
  • Tbsp lemon juice
  • 1⁄2 sweet onion quartered
  • Tbsp red wine
  • 1⁄2 tsp salt
  • pinch black pepper, to taste
  • tsp fresh parsley, chopped
  • tsp fresh basil, chopped
  • 1⁄4 tsp cayenne pepper

Serve with bread.
